Southwestern Quinoa Pepper Boats



These Southwestern Quinoa Pepper Boats are a delicious and healthy meal packed with flavor. Stuffed with a quinoa and vegetable mixture, they are baked to perfection and make for a colorful and satisfying dish.

Ingredients:

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup black beans, canned and drained
  • 1 cup corn kernels, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Lime wedges for serving

Instructions:

Preheat your oven to 375F 190C

Cut the tops off the bell peppers and remove the seeds and membranes

Set them aside

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and the water is absorbed

Fluff with a fork and let it cool slightly

In a large mixing bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, red onion, cilantro, shredded cheddar cheese, cumin, chili powder, paprika, salt, and pepper

Mix well

Drizzle the olive oil over the bell peppers and season the insides with a pinch of salt and pepper

Stuff each bell pepper with the quinoa mixture, packing it down tightly

Place the stuffed peppers in a baking dish and cover with aluminum foil

Bake in the preheated oven for 25-30 minutes or until the peppers are tender

Remove the foil and bake for an additional 5-10 minutes until the tops are lightly browned and the cheese is melted

Serve the Southwestern Quinoa Pepper Boats hot, garnished with fresh cilantro and lime wedges

  • 4 slices of bread
  • 1 cup shredded cheddar cheese

Instructions:

Put a piece of bread on a clean surface

Instructions:

In a baking tray, toss the eggplant, zucchini, bell peppers, and cherry tomatoes with olive oil, salt, and pepper

Roast the vegetables for about 20 minutes or until they are tender and slightly caramelized

In a small bowl, mix ricotta cheese, mozzarella cheese, and Parmesan cheese together

Spread a thin layer of marinara sauce in the bottom of a loaf pan

Place a layer of cooked lasagna noodles over the sauce

Spread half of the roasted vegetables over the noodles

Spread half of the cheese mixture over the vegetables

Repeat the layers with remaining noodles, vegetables, and cheese mixture

Finish with a final layer of marinara sauce and sprinkle with extra mozzarella cheese if desired

Cover the loaf pan with foil and bake for 25 minutes

Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly

Let the lasagna cool for a few minutes before slicing

Garnish with fresh basil leaves before serving

Donut Marshmallows



These Donut Marshmallows are a delightful treat that combines the fluffy goodness of marshmallows with the flavors of donuts. They are perfect for snacking, adding to hot cocoa, or gifting to friends and family.

Ingredients:

  • 1/2 cup water

  • 5 tbsp
  • 1/2 cup light corn syrup

  • 1/2 cup powdered sugar for dusting
  • 1/4 cup cocoa powder for dusting
  • 1/4 cup finely crushed graham crackers for dusting
  • 1/4 cup colorful sprinkles for decoration

Instructions:

Place the granulated sugar and 1/4 cup of water in a mixing bowl

Mix thoroughly

Sprinkle the gelatin over the remaining 1/4 cup of water in a different bowl

Give it roughly five minutes to bloom

The corn syrup and salt should be combined in a saucepan over medium heat

Do not stir as you bring it to a boil

Utilize a candy thermometer to attain 240F 115C

Stirring continuously, slowly pour the hot syrup into the sugar mixture

Stir the mixture after adding the bloomed gelatin until it dissolves completely

Beat the mixture on high speed for 10 to 12 minutes, or until it thickens and becomes fluffy, using an electric mixer

Mix in the vanilla extract after adding it

Dust a 9 x 9 inch 23 x 23 cm square baking pan with powdered sugar and line it with parchment paper

Using a spatula, level the top of the marshmallow mixture once it has been poured into the prepared pan

Sift the powdered sugar and cocoa powder mixture evenly over the marshmallow surface

Top with a scattering of crushed graham crackers

Once the marshmallows are firm and no longer sticky to the touch, let them set for about four to six hours, or overnight

After the marshmallow solidifies, take it out of the pan and use cookie cutters designed like doughnuts to cut it into the desired shapes
